Pre-heat oven to 375°F.
Wash potatoes. Then, dice potatoes into bite-sized pieces (approx. ¼ inch).
Peel garlic cloves. Mince garlic finely, or use a garlic press to mince.
Place diced potatoes, minced garlic, and olive oil into a large bowl.
Add parsley, Italian seasonings, garlic salt, and black pepper into the bowl.
Mix potatoes, garlic, and seasonings together in the bowl, until all the potatoes are well coated with oil and seasonings.
Spread potatoes evenly in a 9×13 baking dish.
Bake potatoes at 375°F for 60 minutes.
