Garlic Roasted Potatoes

  • 3 lbs potatoes red, white, russet, or yukon
  • 6 cloves garlic minced
  • 4 tbsp olive oil extra virgin
  • 1 tbsp dried parsley
  • 1 tsp Italian seasonings
  • 1 tsp garlic salt
  • 1 tsp black pepper


  • Pre-heat oven to 375°F.
  • Wash potatoes. Then, dice potatoes into bite-sized pieces (approx. ¼ inch).
  • Peel garlic cloves. Mince garlic finely, or use a garlic press to mince.
  • Place diced potatoes, minced garlic, and olive oil into a large bowl.
  • Add parsley, Italian seasonings, garlic salt, and black pepper into the bowl.
  • Mix potatoes, garlic, and seasonings together in the bowl, until all the potatoes are well coated with oil and seasonings.
  • Spread potatoes evenly in a 9×13 baking dish.
  • Bake potatoes at 375°F for 60 minutes.
